Feta is a soft traditional Greek cheese in brine made from sheep’s milk or from a mixture of sheep and goat’s milk. The first references to cheese production in Greece date back to the 8th century B.C. The term "feta" has been a protected designation of origin (P.D.O.) since 2002, which limits the name "feta" within the E.U. to brined cheese made exclusively of sheep/goat’s milk in Greece.
