What is whey?

Whey is the liquid remaining in cheese production, after milk has been curdled and strained. It has very high nutritional value. As a by-product of cheese making, if poured into a waterway it has the potential to reduce water oxygen levels, which can cause serious environmental problems. Such a disposal method is illegal.

On the contrary, whey processing leads to a large number of useful dairy products, us whey cheeses and whey protein products. Whey protein is the collection of proteins isolated from whey. After the cheese making process, whey is collected, pasteurized and immediately cooled, therefore maintaining the freshness and the excellent quality before its final processing.

The production includes first of all the ultra-filtration procedure which separates whey protein from the other whey ingredients such as lactose, and then evaporation, drying and packaging. The procedure takes place under strictly controlled health conditions with systematic quality control. The final product —whey protein powder— is a powder of a high level nutritional value. It is a rich source of all the necessary amino acids which play a main role in the protein production in the muscles. It also has a strong antioxidant action and improves the functioning of the immune system. It can also be used in a range of applications including dairy, confectionery, supplement and functional foods.

Finally, whey processing offers the most reliable solution to the major ecological problem of whey disposal, not only by producing pure, natural and useful dairy products, but mainly by giving water as the only and final by-product at the completion of the process.

Myzithra

Myzithra is a traditional whey cheese made from sheep’s and goat’s milk. It has a rich taste with dry butter and milk protein aromas. It has an off-white color and usually a round, compact shape. Myzithra is dried in a closed drier for at least 5-to-6 days. Myzithra can be grated on pasta and is often a side dish in Greek cuisine.
